Wedding Cake History...

A long time ago, people would come to a wedding with a small sweet bread and place it on a tray. At the reception, the bride and groom would kiss over the tower of sweet cakes. If they caused the pile of cakes to tumble, the marriage would be unsteady. If they did not unsettle the cakes, the marriage would be solid. The French decided to help the marriage be stable by holding the cakes together with frosting. This evolved into the tiered wedding cake as we know it.

The wedding cake as we know it today--with its successively smaller layers, supporting pillars, fancy frosting and festoons--had its origins some hundred years later, in a confection that commemorated the marriage of one of Queen Victoria's daughters in 1859.

Even then, a few refinements were missing: only the base tier was actually cake (the rest were pure sugar), and the layers were stacked like hat boxes.

It would take the wedding of Prince Leopold in 1882 before guests could enjoy an entirely "cake" wedding cake, and another 20 years before the tiers were separated by columns (usually disguised pieces of a broom handle).

In the 1930's, however, with the onset of World War II, often a bride would be forced to choose a more practical outfit rather than the typical fancy white wedding dress and the icing would be tinted a color to match. 

Today the only limit to designing your wedding cake is the size of your imagination and your decorating ability!

Another popular wedding cake option is having mini-cakes or a cupcake tree. Dozens of sweetly decorated cakes are stacked and arranged in a pyramid or Christmas tree-like shape.  

Picking the perfect wedding cake is a matter of preference. Whichever one you choose says something about the tone of your wedding.

As today’s weddings are becoming more creative, wedding cakes are following suit. Modern brides are customizing wedding traditions to suit their individual styles, and their cakes are one of the most popular avenues of self-expression. It used to be that wedding cakes came in just the basic flavors. Nowadays, flavors run the gamut from chocolate truffle cake to cheesecake. Do you like the simple elegance of a round, stacked cake or do you prefer the stylish sophistication of a square cake? 

But, make sure you get the best-quality cake possible, ask about the ingredients used. All-natural and high quality ingredients taste best. Avoid cakes or icings made with margarine, shortening or mixes. If it doesn't melt in your mouth, it's not made with pure butter.

One of the trends in wedding cakes are using different shapes and different heights of layers, sometimes mixing and matching in one cake. Mini cakes are one of the most popular trends today. Instead of one main wedding cake, some brides are opting to have intricately designed individual wedding cakes at each place setting, or a slightly larger wedding cake at each table. 

Today, wedding cakes can be covered in a variety of icings and filled with many filling choices. The two most popular choices for icing are Buttercream and Fondant. Buttercream is the most popular and less expensive in most cases. Rolled Fondant is popular because of it's versatility and elegance.

For simple, natural-looking cakes, there's nothing better than Buttercream. Creamy, decadent and versatile, it's a tried and true favorite. However, always choose a filling and frosting that can last where it will be served; if it is warm, buttercream will melt or whipped cream will spoil. On the other hand, if it is a cooler room, both work well, as long as the whipped cream one isn't removed from the refrigerator for long.

Fondant is used to cover a cake with and dries porcelain, white finish. (It can be tinted to any color). It is also used for decorating on, and for creating drapery and quilting effects, ribbons and cut-outs. Fondant makes the cake easy to assemble; handled gently, the wedding cake tiers can just be picked up and stacked — the fondant won't smudge or smear. Plus, piping mishaps can simply be wiped clean. 

Fondant is a good choice for an outdoor summer wedding. It not only protects the cake inside, sealing in moisture, but it holds up well to sunlight, heat and humidity, as Fondant won't drip or melt. (Use a corresponding crumb coat and filling that can withstand as well such as melted, strained jelly glaze, Piping gel, marzipan).

Top Tips For a Scrumptious Wedding Cake

The new trends in wedding cakes allow brides to have a wedding cake that not only looks good - it tastes good too! Brides don’t need to settle for the traditional white vanilla wedding cake with the plastic bride and groom on top any more. From fruit cake to cheesecake, icing to ice-cream, there are many decisions to make when it comes to choosing a wedding cake to suit you, your fiancé and your guests. Take a glance at the following tips to devise the delicious wedding cake you deserve.

Have a multi-flavored wedding cake! This is a great option if you can’t decide between one flavor or another, or if you want to give your guests a selection of wedding cakes to choose from. If you will be having three layers of wedding cake, you could have a layer of mud wedding cake, a layer of vanilla wedding cake and a layer of rainbow wedding cake, something for everyone!

For some extra flavor, have a wedding cake with filling. Talk to your baker about having a wedding cake filling made of white or dark chocolate, strawberry, mocha or preserves.

What about using a modern type of icing? While the traditional soft white icing is still very popular, white chocolate icing would be a delicious, and surprising, alternative.

Have a wedding cake with an unusual shape. At the moment, one very popular style is to have a wedding cake that resembles a stack of presents. This is a fun wedding cake, and generally has two or more square layers, is heavily decorated and tied with a bow.

For a modern looking wedding cake, think about having your layers made in different shapes. For example, a square layer, a heart shaped layer and an hexagonal layer would make your wedding cake modern indeed.

If your wedding will be having a color scheme, decorate your wedding cake to suit. If your color scheme will be rose pink, you could cover your wedding cake with small, romantic, pink rosebuds, either real or made of icing!

For a special touch, talk to your baker about using some of the detail on your wedding dress to make decorations for your wedding cake. If you take a picture of your dress to your bakery they should be able to copy some of the lace, beading or other decorations from your dress onto your wedding cake.

Get sentimental! Copy the wedding cake top your grandparents or parents used at their wedding. To make your, and the groom’s, parents feel extra special, serve them the first slices of wedding cake you cut yourself, before it is taken to the kitchen to be cut and served to your guests.

Personalize your wedding cake by having your, and the groom’s, initials intertwined in icing on your cake as decoration.

Have a wedding cake with a special meaning. For example, if you have been to France together, you may like to have a croquembouche. This is the traditional French wedding cake, a yummy tower of cream-filled pastry!

You may like to follow a special wedding cake tradition practiced in Bermuda. With this tradition, a tiny green tree is used as a wedding cake topper. After the wedding, the bride and groom can plant the tree in their garden and watch it grow, as their marriage does!

Add some accompaniments to your wedding cake for your extra sweet-toothed guests. Chocolates, fruit, sugared almonds or lollies can be placed on your guests’ plates for a decorative touch.

The look of the moment is a wedding cake decorated with fresh flowers. Some favorites include roses, carnations and pansies. These flowers can be made into cascade designs or other styles. For a simply stunning look, have one single, perfect, bloom on your wedding cake, such as a lily or orchid. Using fresh flowers to decorate your cake looks great and needn’t cost a fortune
